Garbanzo beans, otherwise known as chickpeas, are a dietary powerhouse. Containing an array of healthy compounds—including quercetin, chlorogenic acid, and isoflavones, and rich amounts of beneficial unsaturated fatty acids, folate, manganese, and magnesium—chickpeas have been shown to defend against cardiovascular disease, diabetes, and cancer. In addition, they optimize digestive health, and act as a powerful weight-loss aid by blunting hunger and reducing food cravings.
Scientists recently discovered that disturbances in the balance between good and bad gut bacteria can lead to a host of diseases such as inflammatory bowel disease, heart disease, and cancer. However, chickpeas contain a significant amount of indigestible resistant starch and oligosaccharides that work together to create a healthy and balanced gut. Since they cannot be digested in the gastrointestinal tract, good gut bacteria feeds on the starch and oligosaccharides to produce beneficial short-chain fatty acids that protect against cancer by causing cell death and cutting off the blood supply responsible for cancer growth.
That said, adding the glorious chickpea to your diet can be a tasty way to fight against cardiovascular disease, diabetes, cancer, poor digestive health, and obesity.
Need inspiration for how to add chickpeas to your food repertoire? Here's a delicious recipe for Moroccan chicken stew. To ensure it packs an extra healthy punch, buy organic ingredients and grass fed chicken.
I used a crock pot at low heat for about six hours to cook this dish. In doing so, the chicken was extremely tender, and especially savory because all of the ingredients had the chance to deeply penetrate the chicken. It also made for a low maintenance dinner option during a fast and furious week. Simply combine the honey, oil, and spices together in a separate bowl. Then add that mixture to all of the other ingredients in the crock pot. Turn it on low heat, and you're done! (Well, you're almost done.) Serve it over cooked orzo or rice.
Want to add some additional goodness to the recipe, consider adding zucchini.
